Role:
To be fully responsible for the hygiene of all kitchens and restaurants for the entire hotel including (but not limited to) training, reporting and monitoring. The hotel’s food requirements encompass 2 restaurants including the signature Nobu Restaurant and All-Day Dining Restaurant, Tea House, banqueting facilities consisting of 2 ballrooms and 6 meeting rooms, in-room dining, spa and employee dining.
Specific role responsibilities but not limited to:
- To act as an Ambassador of Nobu and answer questions from the guests regarding hotel services, facilities and history/general information.
- To have an extensive knowledge of departmental/outlet competencies.
- Travel as required to off-site events and locations.
- To assist the Executive Chef, Head Chef/Chef de Cuisine in implementing and managing the Food Safety and Hygiene Management System (FSMS) and supporting a safe and efficient hotel operation, therefore contributing to maximizing guest satisfaction consistent with hotel standards.
- To establish good relationships with local SF&DA, Hygiene Bureau and local municipality agencies.
- To monitor production lines in all F&B areas (from receiving to final product).
- To ensure that all food and fridge/freezer temperatures are recorded, tracked, monitor and filed.
- To identify and analyze possible contamination points.
- To be able to carry out microbiological analysis as per Food Hygiene P&P’s.
- To conduct inspections and audits of supplier production process and premises, to ensure compliance with food safety and hygiene.
- To ensure all food is being handled, prepared, stored and transported in a satisfactory manner.
- To ensure that training and performance standards are maintained in food hygiene and use of chemicals.
- To coordinate, organize, follow-up and participate in all FSMS administration.
- To report to the Executive Chef, Executive Pastry Chef, Head Chef/Chef de Cuisine any hygiene related problems and take appropriate actions.
- To motivate team to embrace hygiene and food safety and establish effective standards for all food production.
